- Lotus seeds 50g
- Lotus roots 100g
- Carrots 100g
- Fresh shiitake mushrooms 50g
- Dutch peas 50g
- 1 corn

How to choose fresh lotus seeds
You should choose to buy fresh lotus seeds with a shiny outer layer, white or dark yellow. You should choose to buy lotus seeds that have not yet been separated from their husks because they will still be fresh and delicious. It is not advisable to buy lotus seeds with a brownish-black outer layer or that are dented and not round.
How to choose fresh carrots
The good carrots are the ones that have a moderate size (not too big or too small), with a smooth and glossy skin. When holding them, you can feel the firmness and weight of the carrot. It’s recommended to choose carrots that have a natural orange color, with green stems still attached tightly to the body. It’s not advisable to buy carrots that have strange shapes, with stems or bodies dented, wilted, or showing dark spots, and when you press them, they sink in.
How to choose delicious red apples
When choosing red apples, you can look at the skin of the apple. You should choose apples with evenly colored reddish-brown skin, depending on the time of year the apple may be a bright reddish-brown or slightly darker. However, if the color of the apple is too dark and turns black, you should not buy it.
In addition, red apples with many wrinkles on the skin, thin skin, and light brown flesh inside when squeezed will be very sweet and have a firm and chewy texture. Usually, small wrinkled red apples will be sweeter than larger ones.
How to choose fresh lotus root
To purchase fresh and delicious lotus roots, you should choose roots with big and short stalks, intact and not crushed. For stir-fry dishes, you should choose the 9-hole lotus roots because they have a crunchy texture and sweet taste. 9-hole lotus roots usually have a smooth, white-silver outer skin. You should avoid buying lotus roots that are no longer intact because they are susceptible to parasites and bacteria inside.
How to choose fresh shiitake mushrooms
When buying fresh shiitake mushrooms, you should choose mushrooms that look like an umbrella and are not crushed. Choose mushrooms that are the right size, with a short stem, a tight cap, and a slightly yellow-brown color. Avoid selecting mushrooms with a dark brown cap, as they may be poisonous.
Directions
1. Prepare the ingredients
Soak the red apples in water for about 15 minutes, then rinse them several times with water and remove them to drain. Peel and wash the carrots, then cut them into bite-sized pieces. Peel and wash the lotus roots, then cut them into sections. Cut the corn into pieces about 1 finger long. Wash and drain the fresh shiitake mushrooms, lotus seeds, and green beans, and wash the celery.
2. Cook soup
Add to the pot in sequence: sliced lotus root, corn, lotus seeds, shiitake mushrooms and 1 liter of water. Cover the pot with a lid and bring to a boil over medium heat.
Next, add red apples, carrots, and Dutch beans to the soup pot. Cover with the lid and bring to a boil, then reduce the heat to low and simmer for about 10 minutes until the vegetables are tender.
Finally, season with 1/2 teaspoon of salt, 1 tablespoon of vegetarian seasoning, 1 teaspoon of sugar, and adjust the seasoning to taste. Turn off the heat and serve!
3. Finished product
You can scoop the soup into a bowl and add a little celery on top to enjoy. This vegetarian soup has an eye-catching color from the various vegetables. The broth is refreshing and sweet from the vegetables, which is both nutritious and good for your health.
